My favorite low sugar, high fiber breakfast item!

Ingredients:

  • 1/2 cup chia seeds

  • 1/4 cup unsweetened cocoa powder or cacao powder

  • 1 1/2 to 2 cups milk or dairy-free alternative (such as almond, oat, or coconut milk)

  • 3 to 4 tablespoons pure maple syrup or honey (adjust to taste)

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon vanilla extract

  • 4 walnuts

  • 2 tbsp dark chocolate chips

  • A pinch of sea salt or kosher salt

Directions:

  1. Whisk together the cocoa powder, cinnamon, salt, maple syrup, vanilla extract, and milk until completely smooth and free of cocoa lumps.

  1. Pour in the chia seeds and stir well.

  1. Let the mixture sit for 10 to 15 minutes, then stir it again to prevent the chia seeds from clumping at the bottom.

  1. Refrigerate for at least 4 hours (or overnight) until thick and pudding-like

Why Chia Seed Pudding?

This is filled with nutrient dense foods. Rich in fats (your brain needs this!), fiber and complex carbs. Although this naturally has protein if your looking for a higher protein meal - you can add in your favorite protein powder. You would just add 1/2 cup more milk with a serving of your favorite protein powder.

Some additional nutrients from not only the chia seeds but the walnuts and dark chocolate are different minerals like calcium, magnesium, iron and more. I love this for women, and encourage to through this into your meal plan routine. These nutrient are so important to help support our hormone cycles.
