Superfood Pesto Sauce

Pesto is one of my favorite sauces, especially during summer. It can be used as a pasta sauce, salad dressing, meat topping and when mixed with avocado can become a creamy pesto sauce! I got inspired by “upgrading” the basic pesto recipe because there is a pre-made superfood pesto sauce. I’ll link it HERE - it is also found in most grocery stores. However, my basil plant is going crazy, so it is perfect timing to make my own adaption!
I wanted to used these staples as my base, basil, lemon, parmesan and avocado oil (or olive oil would work). I exchanged the traditional pine nuts for pistachio nuts and added kale to the blend.
I used a 2:1 ratio of basil to kale. So, in theory you could adapt this recipe to fit however much basil you have.

Ingredients:
4 cups cut basil
2 cups baby kale
1 lemon juiced
1 cup avocado oil (or olive oil) - add until you get the right consistency
2 tbsp chopped pistachio
1/2 cup shaved parmesan
Optional add in - 1 garlic clove
Directions:
Combine basil, kale, pistachio, parmesan, 1/2 avocado oil and lemon to blender or food processor and mix.
Slowly add avocado oil until you get the correct consistency.
